Job Description:
The role of the Food Service Manager / Chef is to provide leadership in the food & beverage operation. Hire, train, and supervise kitchen staff. Ensure that food & beverage operations function at an optimum level and are consistent with the organization’s goals and objectives. Manage purchases and receipts of food and beverage products. Hands on operation of the kitchen on a daily basis ensuring prompt quality food service to the following areas:
- 175 seat full-service dining room and bar
- 32 lanes of bowling with full table side service
- Quick service snack bar
- Three event rooms providing space for events from 20-2,000
Responsibilities:
- Consistently prepare and present all corporate menus for a la carte and banquet functions.
- Purchase and coordinate deliveries of all food, soft beverage, paper, and supplies.
- Maintain a high degree of cleanliness, sanitation, and safety in all food service areas.
- Maintain excellence in the preparation and delivery of all food and soft beverage offerings.
- Work in conjunction with the dining & events manager to ensure joint success of the back of the house and the service team.
- Perform weekly physical inventories and meet cost of sales goals.
- Select, hire, train, and supervise kitchen personnel.
- Create team member schedules and meet labor cost goals.
- Expedite line during peak operation.
- Direct involvement with day-to-day preparation and execution of the kitchen.
- Reports directly to General Manager
Requirements:
Experience Required:
- Minimum of 5 years of management experience in restaurant/banquet environments.
- A proven ability to manage effectively.
- Advanced knowledge of food production principles and process.
- Excellent knowledge of BOH systems, ordering and inventory.
- Excellent communication skills.
- Ability to meet deadlines.
Required Skills:
- Team player with energetic and enthusiastic personality.
- Excellent communication and organization skills.
- Ability to teach, communicate, and positively motivate.
- Proficiency with Microsoft office applications. (Word, Excel, Outlook etc.)
- Ability to work in fast-paced environment.

- Ability to take and pass on constructive criticism.
